Nicole and I first ate at Rancher Butcher Chef (everyone in Bend calls it RBC) in May 2026, during our house-hunting trip. We picked it on purpose: it sits in NorthWest Crossing, one of the neighborhoods on our short list.

Six months later, we live in Discovery West, a 10-minute walk or 3-minute bike ride from RBC’s front door. That’s either great news or dangerous news.

The Rancher Butcher Chef restaurant comes from John and Renee Gorham, the team behind Portland’s beloved Toro Bravo. John, a six-time James Beard Award nominee, opened RBC in NorthWest Crossing in August 2022.

Bend noticed fast. The Source Weekly named RBC Best New Restaurant in 2023 and Restaurant of the Year in 2024.

One dinner was all it took. RBC may now be our #1 restaurant in Bend. (We’ll officially redo our best restaurants in Bend rankings in 2027.)

It has everything we love in a steakhouse: excellent cocktails, a deep wine list, beef from local ranchers, and a steak lineup that changes daily with what’s available.

A Bend Steakhouse Built Around Local Ranchers

The name says it all: rancher, butcher, chef. RBC sources beef from partner Will von Schlegell’s 7-Mile Creek Ranch in Fort Klamath and from ranches in the Country Natural Beef cooperative, then breaks down, ages, and cooks it in-house.

Supporting local farmers and ranchers is a big deal for Nicole and me, and at RBC you can see it. Glass dry-aging cabinets line the room, packed with tagged cuts working toward their 7, 28, or 30 days.

The open kitchen keeps the energy up. Grab a counter seat and you’ll watch the cooks work the line a few feet away.  That’s where we ate during this particular visit.

The room is warm and modern-western: wood floors, exposed beams, pendant lights, and an elk skull or two on the walls. Upscale, but never stuffy.

Craft Cocktails and a Cozy Bar

Start with a cocktail. The RBC list is short and creative, with drinks like the Law Ranger, Ghost Rider, and Prescribed Burn built on everything from mezcal to bourbon.

Nicole went with gin, I went with rye, and both were excellent.

Just want drinks? RBC’s small, intimate bar is one of the best spots for cocktails in NorthWest Crossing. For more ideas, see our guide to the best bars in Bend.

A Wine List Built for Steak

The RBC wine list runs deep, with a strong lineup of Old World reds, a full sparkling list, and after-dinner pours of port, sherry, and amaro.

We ordered a bottle of Château Le Puy, a red Bordeaux, and it was exquisite. Structured, earthy, and exactly what you want next to a ribeye.

The Rancher Butcher Chef Menu

The Rancher Butcher Chef menu is built for sharing: small plates, salads, large plates, cuts of meat, sauces, and sides. John Gorham’s Spanish influences from his Toro Bravo days show up throughout, including the potatoes bravas.

The real star is the steak chalkboard, which changes daily based on what’s available. When we visited, it listed house dry-aged cuts like a 7-day tenderloin, 28-day New York strip, and 30-day cowboy ribeye, plus Country Natural Beef cuts, imports like A5 wagyu, and the txuleton, a massive bone-in porterhouse built for the table.

If you’re a steak lover, this is the place in Bend.

Our highlight was the combination of RBC’s house-made sausages and a ribeye. The sausages come as part of the Chef’s Mixed Grill (house sausages plus a rotating cut), served with bright chimichurri. Both were fantastic.

Bringing a group? Order one of the big shared cuts. Watching the kitchen carve a dry-aged porterhouse is half the show.

Save Room for the Basque Burnt Cheesecake

We finished with the Basque burnt cheesecake, topped with tart cherries. Nicole usually doesn’t like cheesecake. This one won her over.

The dessert menu goes well beyond cheesecake, with options like lemon curd panna cotta and banana ice box cake.

Pair dessert with a pour of port, sherry, or amaro from the after-dinner drinks list.
